Now that all that preparation has been done, we want to  be there as an opportunity to assist you as you fit these food aspirations into your life.

We want to tell you about our new neighbors.  First there is Mercy Health and Fitness Center with the following facitlities

  • Spacious fitness floor and exercise studios
  • State-of-the-art cardio, strength training machines and equipment
  • Indoor walking and jogging track
  • Lap swimming pool
  • Warm water physical therapy pool

And across the corridor from Brightside Kitchen's new cafe space, you will find professional guidance for weight loss and nutrition. 

We are excited to learn that Mercy's team will present free classes that are open to the public.  Mark your calendars for the following Tuesdays from 5:30 to 6:30 PM:

January 9 - MIND Diet: Taking Care of the Mind One Bite at a Time

January 23 - Cooking Demo: MIND Diet

February 13 - With a Healthy Heart the Beat Goes On 

February 27 - Cooking Demo: Plant Based Diet

March 13 - Tea Time! Taking a Look at the Health Benefits of Tea

By learning more about these classes, we discovered the MIND Diet. It is based on nutritional practices that researchers have found to sustain brain function as people age. While the diet is not 100% plant based, some whole food components of the diet include leafy greens, other vegetables, nuts, berries, beans, and whole grains. Many diets include whole food ingredients so no matter what diet you ultimately choose to follow, you can rely on Brightside Kitchen to have menu items that  are whole food plant based.

Soon to open, Brightside Kitchen, located inside the Mercy Health and Fitness Center is a fast casual cafe that serves a 100% plant based menu. WHY 100% PLANT BASED? People There are physicians who believe that a plant based diet can prevent and control many of today's modern medical problems.  To learn more, consider the 20 year collection of work from the partnership between Cornell University, Oxford University, and the Chinese Academy of Preventative Medicine. The research is best understood by reading the book, The China Study, T. Colin Campbell, PhD, and his son, Thomas M. Campbell II, MD, discuss and analyze the results from the study.  Planet Utilizing the our earth to grow the most nutrient dense crops with the least amount of input is a practical approach to caring for ourselves and the planet.   Steve studied Animal Science in college.  There he learned about the feed conversion ratio of  cattle, hogs, and chickens.  Steve says, "Although I have raised animals for meat for most of my life, I no longer support that approach to feeding ourselves. It just isn't the best use of our resources. As I look to the future for solutions, finding and sharing culinary uses for smalls grains and diverse crops gets me up and cooking each day.  I like the idea of introducing people to delicious food that helps shift our dependence on corn and soybeans. Animals Humans have a special relationship with animals and a growing number of people recognize that it is wrong to harm animals for our enjoyment. Culture and tradition lead to the practice of eating certain animals. Nutritional needs can be met without harming animals.  At Brightside Kitchen, we enjoy introducing people to delicious alternatives to animal proteins.

Prior to working in the restaurant business, Deanne coached executives to step into larger roles. Deanne says,

"The best part of my work as a coach was the shift in energy I observed. When individuals had new ideas about what was possible for them and for their teams there was a lift in determination that fueled new actions."

As part of our Brightside Kitchen journey, we write here in this blog as a way to inspire others to consider what is possible for them when they take time to imagine. We imagine a time when we connect with you in person or by social media. We see ourselves with time to listen and encourage you on your journey. Since the cafe will be located in a health and fitness center, we imagine there will be people strolling through on their way to a healthier, more fit 2018. 

As 2017 comes to an end, and 2018 stands ready to filled with actions, take a moment to reflect:

Our first retail location will open in mid to late January 2018 at the Mercy Health and Fitness Center which is located at 12493 University Avenue - Clive, Iowa - 50325.  To visit the cafe, enter from the parking lot behind the building from University Avenue.
